Ingredients

For the Khichdi

  • ½ cup rice
  • ½ cup yellow moong dal
  • 1½ tablespoons OLEAF Cold-Pressed Mustard Oil
  • 1 small onion, finely chopped
  • 1 medium tomato, finely chopped
  • ½ cup carrots, diced
  • ½ cup green peas
  • ½ cup French beans, chopped
  • ½ cup cauliflower florets
  • 1 teaspoon cumin seeds
  • ½ teaspoon grated ginger
  • 1 green chilli, finely chopped — optional
  • ¼ teaspoon turmeric powder
  • ½ teaspoon coriander powder
  • Salt, according to taste
  • 4 to 4½ cups water
  • 2 tablespoons fresh coriander, chopped

For the Optional Premium Tadka

  • 1 teaspoon OLEAF Cold-Pressed Mustard Oil
  • ½ teaspoon cumin seeds
  • A pinch of asafoetida
  • 1 dried red chilli
  • 4–5 curry leaves

Method

1. Prepare the Rice and Dal

Wash the rice and moong dal thoroughly until the water runs mostly clear. Soak them together for approximately 15 minutes, then drain.

2. Warm the Mustard Oil

Heat OLEAF Cold-Pressed Mustard Oil in a pressure cooker or heavy-bottomed pot over medium heat. Allow it to warm gently until its naturally bold aroma begins to develop.

Avoid overheating the oil.

3. Build the Flavour Base

Add cumin seeds and allow them to crackle. Add the grated ginger and green chilli, then sauté briefly.

Add the chopped onion and cook until soft and lightly golden. Stir in the tomato, turmeric, coriander powder and salt. Cook until the tomato becomes soft.

4. Add the Vegetables

Add the carrots, peas, beans and cauliflower. Sauté for 2–3 minutes so the vegetables absorb the aromatic spices and mustard oil.

5. Cook the Khichdi

Add the soaked rice and moong dal. Mix gently for one minute.

Pour in 4 to 4½ cups of water and stir well.

For a pressure cooker, cook for approximately 3 whistles over medium heat. Allow the pressure to release naturally.

For a covered pot, cook over low to medium heat for approximately 30–35 minutes, stirring occasionally and adding more hot water when required.

6. Finish and Serve

Once cooked, gently mix the khichdi. Add a little hot water when you prefer a softer, more comforting consistency.

Finish with freshly chopped coriander.

For an additional layer of aroma, prepare the optional tadka using OLEAF Cold-Pressed Mustard Oil, cumin, asafoetida, dried chilli and curry leaves. Pour it over the hot khichdi immediately before serving.
